Creamed Kale or Spinach (AIP)

I really like creamed spinach but creamed anything on AIP needs some substitutions.

I also use kale, spinach, and even beet leaves, fairly interchangeably. They each have lots of nutrients and need little work to add to just about anything, though beet leaves are better cooked a bit and kale is better soaked for 15 minutes in lemon juice to really enjoy them raw.

Ingredients:

1/4 cup unsweetened coconut flakes (optional, and shredded coconut will also work)

1 lb hardy greens, chopped (kale, Swiss chard, mustard greens, beet leaves, or a combo; about 1 to 2 bunches)

3 tbsp coconut oil

6 garlic cloves, sliced or diced

1 medium onion, finely chopped

1 2″ piece ginger, peeled and grated (or 2 tbsp minced, or 2 tbsp dried/powder)

1/2 tsp salt

1 1/2 tsp arrowroot starch (or cream of tarter)

1 tsp ground turmeric

1 cups coconut milk (or coconut cream) (AIP requires no emulsifiers, i.e. guar gum)

1 tbsp cilantro or parsley, fresh or dried (optional)

Directions:

Add coconut flakes to a dry skillet over high heat. Cook for a few minutes until slightly brown and tasted – don’t walk away, it happens quickly. Remove from heat and set aside.

Heat oil in large skillet (same pan is fine) over medium heat. Add onions, stirring often, until softened, about 5 minutes. Add garlic and ginger, continuing to stir, about 3 more minutes.

Season with salt. Add starch and turmeric, stirring to combine. Cook another minute or two.

Add coconut milk to skillet and bring to a simmer. Add greens a handful at a time. Give each handful time to wilt slightly before adding the next batch. Cook, tossing occasionally, until greens are tender and mixture looks creamy.

Taste and season with more salt if necessary.

Transfer greens to a shallow bowl and top with toasted coconut flakes and cilantro or parsley.

Note: For FODMAP, replace the onions and garlic with 1/4 cup diced celery and/or 1/4 cup shredded carrots. It will change the flavor and look, but will still be amazing.
